The Bachelor's program in Food Chemistry at the Westfälische Wilhelms-Universität Münster is a full-time, German-language program offered by the Department of Chemistry and Pharmacy. It provides a comprehensive scientific education that begins with a solid foundation in general and physical chemistry, mathematics, and physics, before progressively advancing into the specialized domains of food chemistry, technology, and analysis. The curriculum is structured so that the first two semesters establish the necessary chemical groundwork — including inorganic, organic, and physical chemistry, accompanied by laboratory practicals. From the third semester onward, the program introduces toxicology, modern analytical chemistry methods, and database research skills, reflecting the regulatory and investigative nature of the profession. By the fourth semester, students begin dedicated food chemistry coursework, covering food chemistry and food technology alongside food microbiology and hygiene, all of which include laboratory components. Biochemistry and biophysical chemistry run in parallel, deepening students' understanding of biological processes relevant to food systems. The fifth semester intensifies practical and analytical training with instrumental food and feed analytics, a biochemistry laboratory, and studies in the biology of cultivated plants and their bioactive compounds. In the final semester, students apply their accumulated knowledge in an applied food chemistry seminar and practical, conduct botanical fieldwork on crop plants, and complete their Bachelor's thesis. Throughout the program, students also engage with elective modules spanning languages, social sciences, biology, physics, medicine, mathematics, and economics — allowing a degree of individual focus. Optional industrial internships provide additional professional exposure. The curriculum was comprehensively revised and updated following re-accreditation, ensuring its alignment with current scientific and regulatory standards.
