A science-heavy bachelor's at the intersection of food microbiology, quality management, and food law, structured around four industry-relevant specialisations: animal-based foods, plant-based foods, convenience/bakery & confectionery, and beverages. The Food Safety bachelor's at Hochschule Geisenheim University trains specialists who can ensure the safety and quality of food products across the entire production chain — from raw material analysis to shelf-ready goods. The programme takes an applied-science approach, combining deep theoretical foundations in chemistry, microbiology, and food technology with practical laboratory work and regulatory knowledge.
The curriculum is built on a progression from fundamental sciences in the first year — general and organic chemistry, biochemistry, physics, food processing technology, food law, and applied mathematics — towards increasingly specialised content. By the second year, students work with HACCP principles, food-safety standards, instrumental analytics, bioanalytics, cleaning and hygiene management, and auditing methodology. The third year allows students to concentrate on one of four industry-relevant specialisations and complete a research-based bachelor's thesis.
A distinctive structural feature is the cooperation between Hochschule Geisenheim and Hochschule Fresenius: students enrolled at Geisenheim gain free access to selected Fresenius courses, extending the range of elective modules available without additional cost.
Practical training is embedded in the programme as a mandatory component, giving students direct exposure to food industry workflows before graduation. Optional professional certifications — including the DGQ Quality Representative qualification and the IHK Trainer Aptitude — can be pursued alongside regular studies, providing recognised credentials in addition to the degree itself.
The programme is taught in German and follows a full-time schedule, with a dual-study format also available for students who wish to combine academic study with employment at a partner company.
