Food Safety, B.Sc.
Bachelor's in Food Safety at Hochschule Geisenheim University, Germany — an applied-science programme training specialists in food quality and safety across the full production chain, with curriculum spanning chemistry, microbiology, food technology, HACCP principles, instrumental analytics, and auditing. Students choose one of four industry-focused specialisations — animal-based foods, plant-based foods, convenience and bakery products, or a fourth track — and complete a research-based thesis; a cross-institutional agreement with Hochschule Fresenius extends available coursework. Taught in German.

Will I get in
Every applicant who meets the formal requirements is admitted — but places can run out before the deadline, so apply at the start of the window.
- ✓Those who are genuinely curious about how food is produced, preserved, and regulated — and want to work at the scientific core of that process rather than just its commercial or culinary aspects.
- ✓Those who enjoy laboratory and analytical work: the programme has a strong practical-science component from the first semester onward.
- ✓Those interested in quality systems, regulatory compliance, and food law — the curriculum gives these topics the same weight as microbiology and chemistry.

- ✓Those drawn to the food industry as a stable, internationally relevant sector with clear professional pathways into quality management, product development, or food safety consultancy.
- ✓Those comfortable working in German — the programme has no English-language alternative track.
- ✓Those who prefer a structured, full-time study path with defined content and measurable specialisations rather than a broadly elective academic environment.
- —The programme is taught entirely in German. International applicants without a strong command of German will face significant difficulty, as there is no parallel English-language track.
- —Geisenheim is a small town in the Rheingau wine region with a population of roughly 11,000. Students who prefer urban living should factor in the relatively limited city infrastructure compared to Frankfurt, which is about an hour away by regional train.
- —The first year is scientifically intensive — chemistry, microbiology, biochemistry, mathematics, and physics all run simultaneously — which may require focused preparation for students from backgrounds with limited natural-sciences exposure.

- —The programme has no admission restriction (keine Zulassungsbeschränkung), meaning acceptance is not grade-selective. However, the academic content is demanding from the start regardless of admission ease.
- —A mandatory practical training period is required as part of the degree. Students on the standard full-time track should plan for this placement within the study timeline.

Programme selection →About the programme
The Food Safety bachelor's at Hochschule Geisenheim University trains specialists who can ensure the safety and quality of food products across the entire production chain — from raw material analysis to shelf-ready goods. The programme takes an applied-science approach, combining deep theoretical foundations in chemistry, microbiology, and food technology with practical laboratory work and regulatory knowledge.

The curriculum is built on a progression from fundamental sciences in the first year — general and organic chemistry, biochemistry, physics, food processing technology, food law, and applied mathematics — towards increasingly specialised content. By the second year, students work with HACCP principles, food-safety standards, instrumental analytics, bioanalytics, cleaning and hygiene management, and auditing methodology. The third year allows students to concentrate on one of four industry-relevant specialisations and complete a research-based bachelor's thesis.
A distinctive structural feature is the cooperation between Hochschule Geisenheim and Hochschule Fresenius: students enrolled at Geisenheim gain free access to selected Fresenius courses, extending the range of elective modules available without additional cost.
Practical training is embedded in the programme as a mandatory component, giving students direct exposure to food industry workflows before graduation. Optional professional certifications — including the DGQ Quality Representative qualification and the IHK Trainer Aptitude — can be pursued alongside regular studies, providing recognised credentials in addition to the degree itself.
The programme is taught in German and follows a full-time schedule, with a dual-study format also available for students who wish to combine academic study with employment at a partner company.
What you study
First Year — Foundations
- General and Inorganic Chemistry: atomic structure, bonding, reaction types, stoichiometry relevant to food composition
- Organic Chemistry: functional groups, reactions, and chemical properties of food-relevant organic compounds
- Biochemistry: metabolism, enzymes, macronutrient structures relevant to food systems
- General Microbiology for Food Safety: microbial cell biology, growth, reproduction, and basic microbial ecology in food contexts
- Physical Principles: thermodynamics, mechanics, and physical properties relevant to food processing
- Fundamentals of Food Process Technology: unit operations, heat treatment, preservation technologies
- Food Law: European and German legal framework governing food safety, labelling, and market access
- Mathematics: calculus, functions, and quantitative reasoning for scientific applications
- Statistics and Biometrics: experimental design, data evaluation, and statistical methods used in food science
- Technical and Business English I: food industry vocabulary, report writing, and professional communication in English
- Scientific Methods and Key Skills: academic writing, literature research, and transferable professional skills
- Elective: From Raw Material to Prepared Dish — an integrative overview module bridging raw-material knowledge and culinary processing

Pick programmesCareer
Graduates are prepared for direct entry into food-producing and food-processing companies, as well as regulatory authorities and inspection bodies. Typical roles include quality and hygiene management, food safety auditing, product development, and specialist consultancy. The combination of laboratory science, regulatory knowledge, and management methods makes graduates relevant across the full food industry value chain — from primary processing to retail-ready products. Optional DGQ and IHK certifications strengthen profiles for quality assurance positions specifically.

Requirements and application
| Previous education | Applicants must hold a German Allgemeine Hochschulreife, Fachhochschulreife, or fachgebundene Hochschulreife — or an equivalently recognised vocational qualification such as a Meisterbrief or state-certified Technician diploma. |

The procedure and the set of documents depend on your certificate. We check the university's requirements against your documents and give you a list: what to submit, how to certify and translate it, where and when to apply.
Check the requirementsHow to get into this programme
- 1Check your certificate and its recognitionDirect admission, a year at a university at home, or Studienkolleg first — this decides the whole plan.
- 2German up to C1 and a certificateDSH or TestDaF has to be passed before you apply.
- 3Documents and translationsCertified translations of the certificate and transcript, an APS if required. 3–4 weeks.
- 4Application via uni-assist until 01.09uni-assist checks documents for 4–6 weeks — send them well before the deadline.
- 5Admission, visa, movingPlan 2–3 months for the visa and the blocked account in parallel.
How to apply
You can submit the application yourself or with our help — the university decides on admission in both cases.
Applications go through the university's portal or uni-assist. Typical mistakes:
- ×incorrectly made certified copies and translations
- ×a wrong set of documents
- ×the application submitted the wrong way
- ×errors or gaps in the application form
- ×the application submitted at the wrong time — too early or too late
An incomplete or incorrectly prepared application is excluded from the selection — it can no longer be corrected after the deadline.
StudyInFocus does not represent the university and does not influence the admission decision. We do not sell study places and do not guarantee admission — this is a service for preparing and submitting documents on the applicant's side.
If your level is not enough yet
The two most common stoppers are a language level below the requirement and a certificate without direct admission. Both can be solved, but they take months — plan them now, not after a rejection.
