Nutrition plays a central role in health research. Unilateral diet and obesity are clearly associated with a variety of diseases such as diabetes mellitus or cardiovascular diseases. But the development of tumor diseases is also linked to nutrition; it even plays a greater role than smoking. Occasionally, pollutants can also be detected in food. Antibiotics in meat products, dioxins in eggs or heavy metals in fish are increasingly making headlines in the daily newspapers. Food, nutrition and human metabolism are therefore among the current focal points and key future topics for society. The production of new types of food as well as the diagnosis and therapy of nutritional diseases require a new quality of knowledge, with food science, medicine and nutritional science cooperating.

The nutritional science course teaches scientific and biomedical basics that enable employment in applied nutritional science research. In particular, activities in basic research, industrial food product development and other areas of industrial and clinical research are developed through the course. Furthermore, the basic knowledge, methods and skills of experimental nutritional research should prepare for the study of the consecutive master's program.

Studying is not the same as training as a nutritionist. The Bachelor of Science degree and the acquired scientific and nutritional knowledge also qualify for work in this area, furthermore in media work or work in national and international organizations and authorities.

The academic degree Bachelor of Science represents a first professional qualifying academic degree and forms the theoretical and research methodological basis for the subsequent research-oriented master's program in Nutritional Science (M.Sc.).

The master's program provides specialized nutritional knowledge in various sub-disciplines of nutritional science, including Molecular sensors, biochemistry of micronutrients, gastrointestinal microbiology, energy metabolism, molecular nutritional epidemiology, molecular nutritional medicine or experimental diabetology. The course takes you further to the experimental and applied science projects of the University of Potsdam, which are currently concentrating particularly on the research into the molecular causes of nutritional diseases and the development of new strategies for their prevention and therapy.

The master's degree is also the basis for further academic steps, such as a subsequent doctorate.

On the basis of scientific methods, nutritional science examines the effect and function of food ingredients, processes in food utilization, and the mechanisms of action and elucidation of signal cascades of metabolic processes. With her research results, she makes a significant contribution to maintaining the health, performance and well-being of people.

At the University of Potsdam, the nutritional science course is one of the life science courses. During the course, knowledge about the molecular structure and functioning of living organisms as well as their interaction with each other and with the environment is conveyed. The training covers biochemical, food chemical, microbiological, molecular biological, cell biological, physiological and toxicological aspects including their relation to pathological conditions. The specialist areas involved are physiology and pathophysiology of nutrition, biochemistry of nutrition, nutritional toxicology, food chemistry, nutritional medicine and epidemiology.

    The Faculty of Science is the largest of the five faculties at the University of Potsdam. The majority of its departments are located in the Science Park in Potsdam-Golm. The Faculty of Science maintains close collaborative relationships with extramural research institutions in the Potsdam region in the form of joint professorships and numerous projects. These partnerships cover a broad spectrum from basic research to application-oriented research. The faculty also has cooperative relationships with several research institutions throughout Germany and the entire world. Over 80 professors teach and research at the faculty. They supervise almost 6,000 students and doctoral candidates.
