Ökotrophologie

Ecotrophology is a science that deals with the physiological, psychological, sociological and economic aspects of nutrition in the narrower sense and consumption in the broader sense of people in private and in public space. As an interdisciplinary course of study, ecotrophology is concerned not only with social science approaches, but also with the scientific foundations of nutrition. Both the composition of food and its analysis, the analysis and evaluation of biochemical processes in the human organism and the understanding of consumer behavior in a social and economic context play a role.

One focus of ecotrophology is on nutritional and health behavior. Students acquire theoretical and methodological skills to better understand human behavior and its influencing factors. The focus here is on the design, implementation and evaluation of prevention and intervention strategies using suitable means of communication.

Another focus is the topic "Sustainability and Consumption". Long-term social megatrends to be observed, such as advancing globalization, digitization, demographic change or climate change, make the topic of sustainability more important than ever. Consumers can make a contribution to this, but also a large number of actors in food politics and industry influence the general conditions. The interaction and communication of the actors needs to be better understood in order to promote the change to more sustainable lifestyles.

The course is primarily aimed at German-speaking prospective students, since the courses are predominantly held in German. However, the use of English-language literature is required. Semesters abroad are supported and modules completed at other universities are recognized if they are equivalent.

The department has many partnerships with foreign universities and research institutions. These partnerships are used both for the development and implementation of joint research projects and for teaching opportunities for students of the department.

Composition of degree programme

Studies are offered in the form of modules comprising 4 hours/week per semester. Modules are finished with exams. The marks achieved in the individual exams add up to the final grade. This degree programme consists of 15 core modules (compulsory), 13 specialisation modules (elective) and a Bachelor's dissertation. This structure allows students to specialise in a varied range of individual directions on the basis of sound scientific training in the fundamentals.

Specialisation modules

The following specialisation modules could be chosen, for example:
  • Nutrition Therapy;
  • Age-specific Nutrition and Dietetics;
  • Supply and Catering Management;
  • Consumer Behaviour and Counseling;
  • Business Operations, Market Theory and Consumer Policy.

Pracitical application

Students may undertake a 9-week work placement (12 credit points) during their studies, allowing them to familiarise themselves with the realities of the professional sphere and help them find an area in which to specialise. The Placements Office maintains a database of suitable companies and institutions.

Bachelor's dissertation

Almost half of the study time in the sixth semester is allotted to writing a dissertation. In the Bachelor's dissertation, students are expected to show within a limited time that they are capable of independent academic work.

Safeguarding the worldwide food supply as well as a healthy nutrition are the focus of research and teaching of all disciplines in our faculty. The broad range of topics and issues goes from primary production to food processing on to the development of environment-friendly land use systems and biogeochemical cycles, all discussed and examined from a scientific and economic point of view.
